Hi Geoff, I was told to soak chops in a brine for at least 4 hours before pan frying then finish in the oven. I this incorrect, your method looks delicious. Doug.
Hi Doug yes it is another way of doing it very American not something I have ever felt the need to do but I think it works fine , the way I cooked that pork it did not need anything ells doing to it , it was like a good steak fantastic give it a go cheers for now ...
