I don't know of any cocks that hoot. Maybe you know differently.

It's Cock-shoot. A cockshoot is like a decoy. In a decoy a net tunnel is set up at the end of stream and waterfowl are chased into it. A cockshoot is the same idea but on land, usually for catching pidgeons, or woodcock.

There are loads of woodcock in the area around Cockshoot Dyke - I see them every night when we're down in Horning at the beginning of June
